SCALLOPS WITH TALEGGIO PDO FONDUE

  1. Dice the Taleggio PDO.
  2. Pour the cream into a saucepan, add the Taleggio PDO and chives.
  3. Allow to rest for 30 minutes.
  4. Heat the mixture over a very low flame until the cheese melts.
  5. Wash the scallops and their shells.
  6. Place the scallops in their shells, grease them, pour on the fondue and cover with breadstick crumbs.
  7. Bake at 200° for about 8 minutes.
  8. Remove from the oven and garnish with chopped chives.
